Our Shiraz is a very, focused classy and beautifully structured wine. True to its
variety, the wine is deep, black and brooding in color. The nose shows bright fresh aromas
of blackberry, licorice and spice. We have purposely kept the new oak component at a
minimum to allow the vibrant fruit characters of the vintage to elevate. We especially love
the palate of this wine, particularly the warmth, length and velvety silkiness it delivers.
A very unusual grape variety for Australia, this new grape variety has produced quite a
unique wine. The nose is unmistakably Zinfandel. Spicy aromas along with red fruits and
pomegranate predominate, complexed further with slight raisiny notes from the riper
zinfandel grapes. The color is a vibrant red/purple showing nice depth. The wine is medium
bodied and structured with bright acidity, finishing with evident but soft tannins. Great with

Whiskers Blake Port was especially selected from premium aged tawny ports. All components were matured in small oak casks for an average of 8 years. A youthful, vibrant crimson with a purple rim. Clearly a varietal with a lively, spicy character and attractive aromas of summer pudding, mint and red berries. A hint of cedary oak supports the fruit and adds complexity. The palate displays an impressive depth of primary fruit combined with a soft mouth-feel and excellent length. Initial ripe plum and chocolate flavors are given definition and structure by fine-grained tannins and subtle oak before a lingering red currant fruit finish.

An archetypal refined Barossa Shiraz nose with liquorice,
blackberry and plum aromas over a tar underlay. With
closer inspection, higher floral notes arise meshed with
lemony, scented oak.

Post fermentation characters of butterscotch and freshly baked bread combine with the fruit aromas to produce a wine with subtlety and complexity. A balanced combination of citrus fruit, creamy yeast-derived characters, toasted oak, and smoked bacon. Rich yet refined in its flavours; the oak, batonnage (stirring) of the yeast lees and malolactic fermentation have contributed to the length without dominating the palate. The
finish is clean, lively, and refreshing.

The Layers is a blend of 5 grape varieties Semillon, Chardonnay, Pinot Gris, Gewürtztraminer and Muscat picked from different vineyards throughout the Barossa and Adelaide regions. There are excellent varietal characters on the nose combining with fresh berry aromas and subtle, smoky hints of well integrated oak. The palate shows rich, blackcurrant fruit flavors with well defined tannins and a lingering aftertaste of wood smoke and ripe summer fruits. The wine has plenty of structure and whilst approachable now, it will improve in the bottle over a five year cellaring period.
This Chardonnay reflects the fruit quality achieved in the Hunter Valley, displaying a straw yellow appearance with a full, fresh aroma of peach and melon fruits with some hints of citrus. A creamy background hints at the judicious use of oak and lees in maturation. The palate is generous but not over-stated, with soft, ripe tropical fruit flavors folded over a creamy backdrop.
