Appearance
The wine is yellow-gold in colour, but for once, let’s also consider
the sound of the wine. As the bubbles reach the surface, the
babbling sparkle echoes the majestic and persistent liveliness
of the mousse. A persistent stream of bubbles rises in the glass
and a distinct collar appears around the rim.
Nose
The nose shows complexity and maturity, with successive aromas
of violets and black cherries developing into butter and toasty
nuances.
Palate
The wine is generous and unctuous, revealing crushed fruit
flavours and secondary aromas of mocha, subtly lifted with spice.

The Fleur de Champagne is a Brut wine, composed of 50% Chardonnay, 45% Pinot Noir and 5% Pinot Meunier grapes. The blend contains a high proportion of Chardonnay that comes from the grand crus of the Côte des Blancs. Pale gold in color. Bouquet: The wine shows hints of floral and fruit aromas, opening with white flowers and a touch of honey, ending with a hint of brioche. The palate is crisp and clean, with hints of almond and nougat. While the cuvée is light and elegant, it has a surprisingly long finish.

suggesting ripe fruit or fruit tarts. The additional fullness brought by the extra sweetness
is nicely balanced by the fresh finish.
As this wine is more rounded than the traditional Brut Carte Jaune, it goes well with a
variety of dishes: fish in particular and even some desserts that are not over sweet.

with glowing bronze tones. Effervescence is fine and long-lasting.

The wine is superbly balanced between concentrated fruitiness and elegant freshness. Red
fruit notes fill the palate and the Bouzy red wine plays its role to perfection. The wine has a
satiny texture, and is solidly built and yet delicate at the same time. The finish is deliciously
long, ending in silky, velvety tannins.
The strength and generosity of Rosé Reserve 1998 makes it the ideal accompaniment to an
entire meal. For example, a Jabugo-style raw ham to start, followed by loin of veal with
thyme and sauteed cep mushrooms, a creamy reblochon cheese, and a soup of red fruits with
balsamic vinegar, would marry perfectly.
Although Rosé Reserve 1998 is currently enjoyable and very inviting, it would benefit from a
long period of cellaring, developing more mature notes of undergrowth, toast, ripe fruit, and
