DESCRIPTION

Appearance The wine is yellow-gold in colour, but for once, let’s also consider the sound of the wine. As the bubbles reach the surface, the babbling sparkle echoes the majestic and persistent liveliness of the mousse. A persistent stream of bubbles rises in the glass and a distinct collar appears around the rim. Nose The nose shows complexity and maturity, with successive aromas of violets and black cherries developing into butter and toasty nuances. Palate The wine is generous and unctuous, revealing crushed fruit flavours and secondary aromas of mocha, subtly lifted with spice. The flavours are beautifully balanced and the finish is elegant, harmonious and fully developped.

Varietal

Brut describes the driest Champagne with the least residual sugar.  The sweetness level of the sparkling wine is determined by the amount of sugar added after the second fermentation and aging period.

Sparkling wines and Champagnes are categorized as Brut, Extra Brut, Extra dry, Sec and Demi-sec depending on their sugar levels. Brut Champagne is sold without any residual sugar and these wines are referred to as Brut Natural and, unlike earlier Champagnes, it's dry and not sweet.

  • Brut – dry (most popular style and very food-friendly)
  • Extra dry – middle of the road dry, not as dry as Brut (great as an aperitif)
  • Demi-sec – pretty sweet (pair with fruit and dessert)

Champagne and sparkling wines are also categorized as "vintage" or "non-vintage" (NV on the label) meaning they either come from a single year or are a blend of several different years.
