A beautiful shade of yellow, with touches of pink and gold. The bubbles are fine and very effervescent. On the nose the Veuve Clicquot Demi Sec is soft and pleasingly mature, reminiscent of crystallized fruit and patisserie. The nose is well balanced with wonderful depth. On the palate the wine is remarkably full, rounded and mature with intense fruit, suggesting ripe fruit or fruit tarts. The additional fullness brought by the extra sweetness is nicely balanced by the fresh finish. As this wine is more rounded than the traditional Brut Carte Jaune, it goes well with a variety of dishes: fish in particular and even some desserts that are not over sweet. Needless to say it is a delicious wine to drink on its own at any time of the day or night.
Champagne is a region of France, and only wines which come from this region can properly be called "Champagne". Similar drinks from California, and the rest of the world should be called "sparkling wines". It is produced by inducing the in-bottle secondary fermentation of the wine to effect carbonation.
