Bushmills Malt 21 Year Old is an extremely rare single malt Irish whiskey. Only a very limited number of bottles are available each year. It is matured in three different types of casks. The whiskey is first aged in American bourbon barrels and Spanish Oloroso sherry casks for 19 years and upwards. The malt whiskey is then vatted and married for another 2 years in Madeira drums.

Kilbeggan is a blended Irish whiskey, formed from a unique blend of the finest hand selected Irish malt and grain whiskies. The palate reveals soft almond nougat peach, caramel and vanilla flavors before finishing quickly with soft, light malt sugar flavors. Distilled twice for additional flavor and character, Kilbeggan is easy going and approachable, but with its own distinctive style.
Limited release. The initial aroma of freshly mown Hay is complimented by a crisp Orchard Fruit character, Green Apples and Pears along with a twist of Lime Zest. Mild Pot Still Spices appear, deepening from Green Tea to Hazel Nut and Milk Chocolate. The lingering Hop influence combines effortlessly with Toasted Oak and Barley Grains to form a solid base. As expected, there is the initial sweet mouth coating typical of the Irish Pot Still Whiskey inclusion. Then the effect of the Beer Cask finish becomes apparent with the subtle touch of Hops and Cocoa Beans. Some Marzipan and Charred Oak add to the complexity. Long and sweet finish with Milk Chocolate and Butterscotch.
Following distillation, the whiskey is matured in a combination of American oak casks that were previously used to mature bourbon and European oak casks that were previously used to mature Spanish Oloroso sherry. After a 21-year slumber, the whisky is bottled without the use of chill filtration. As a result, the whisky a rich and oily aroma, with touches of berries, fresh mint and citrus. The aroma gives way to bold and vibrant notes of oak, spices, caramelized apples and raisins and finishes with a touch sherry.
Unique among Whiskeys, Redbreast is a 'single', unblended, Pure Pot Still Irish Whiskey which has been Triple Distilled and Matured in oak casks for no less than twelve years. The uncompromising dedication to authenticity and quality gives Redbreast a traditional smooth mellow character and a taste which is full flavored and assertive but not over robust.
Released in 2011, Midleton's Barry Crockett edition was named after the distillery's master distiller, and it is aged in both bourbon and new American oak barrels! Very interesting indeed and a limited release of around 2,500 bottles per year. Nose: Soft, sweet notes of barley, floral honey, rosemary, citrus, cut hay, Summer meadows and toffee apples. Palate: Sweet tobacco leaves and ceda, sugared peels, toffee, honey softness, vanilla and boiled sweets. Finish: Very creamy and vanilla-rich, cinnamon and a little pear drop on the tail.
