Bushmills Malt 21 Year Old is an extremely rare single malt Irish whiskey. Only a very limited number of bottles are available each year. It is matured in three different types of casks. The whiskey is first aged in American bourbon barrels and Spanish Oloroso sherry casks for 19 years and upwards. The malt whiskey is then vatted and married for another 2 years in Madeira drums.

Connemara is a blend of aged whiskies, a 4 year, a 6 year and an 8 year. The 4 year old gives the whiskey a level of vibrancy, while the 8 year old adds depth to the whiskey while the 6 year old is needed to marry them together. On the nose, Connemara has an initial smokiness with an underlying sweetness. The palate offers up flavors reminiscent of a forest fire, with the creosote flavor continuing as well as a slightly medicinal note balanced with soft caramels and sticky buns. The finish is peaty, lingering and almost mysterious, with rich chocolate pot de creme notes at the end.

Mild Pot Still Spices appear, deepening from Green Tea to Hazel Nut and Milk Chocolate. The lingering Hop influence combines effortlessly with Toasted Oak and Barley Grains to form a solid base. As expected, there is the initial sweet mouth coating typical of the Irish Pot Still Whiskey inclusion. Then the effect of the Beer Cask finish becomes apparent with the subtle touch of Hops and Cocoa Beans. Some Marzipan and Charred Oak add to the complexity. Long and sweet finish with Milk Chocolate and Butterscotch.
