This biscuity side to the wine very quickly gives way to the aromas of flowers (iris, lily-of-the valley and the flowers of Seville orange trees) and citrus fruits (bergamot and citron). Just beneath the surface several mineral (wet rock and flint) and iodised saline notes make an appearance. On the palate this vintage is initially direct but silky, sustained by mineral notes. The ephemeral nature of the Dom Ruinart is then revealed through citrus fruit freshness with touches of gentian. The very long finish is characterized by grapefruit and kumquat zest notes with just the slightest hints of salinity.

Its aromas reveal an exotic fruitiness yellow peach, plum, pineapple and honey with floral nuances (lime blossom) and elegant blond notes (brioche and fresh nuts). On the nose the Veuve Clicquot Demi Sec is soft and pleasingly mature, reminiscent of crystallized fruit and patisserie. The nose is well balanced with wonderful depth. On the palate the wine is remarkably full, rounded and mature with intense fruit, suggesting ripe fruit or fruit tarts. The additional fullness brought by the extra sweetness is nicely balanced by the fresh finish. As this wine is more rounded than the traditional Brut Carte Jaune, it goes well with a variety of dishes: fish in particular and even some desserts that are not over sweet. Needless to say it is a delicious wine to drink on its own at any time of the day or night.
