Tasting notes of dark fruit, spice, and chocolate. The Top Box style is very light handed with minimal intervention, showcasing the uniqueness of Washington State: fruit forward, structured yet smooth, with just a kiss of oak. We achieve this by fermenting and aging primarily in stainless steel with twice daily pump overs for 5–7 days. We then move the juice to finish primary fermentation off skins with malolactic fermentation to follow. Aging occurs primarily in stainless steel to retain fruit and freshness.
