Hand-harvested, whole cluster, single-vineyard fruit was gently pressed and cold settled overnight. The winemakers fermented the juice in French oak puncheons and small amphorae, and, following fermentation, stirred the lees weekly for two months, then tapered the stirring to biweekly, then monthly, to enhance the mouthfeel of the wine without losing the intense aromas. These efforts resulted in an extraordinary Sauvignon Blanc—Les Pionniers.
