• 2 oz Caravedo Pisco 
  • 1 oz Lemon juice
  • .5oz Simple syrup
  • .5oz-1oz Aquafaba or Egg White
  • Angostura Aromatic Bitters for garnish


  1. Add egg white or aquafaba to a shaker and dry shake to create a foam
  2. Add ice, pisco, lemon juice, and simple syrup to the shaker
  3. Shake again very hard until well-chilled, about 10 seconds
  4. Strain into chilled cocktail glass; dash bitters atop the foam
